Diane Tapscott –
Questions: what is the diameter and could I carve out the center and make cacio Pepe in it? Grazie

Hi! Thank you for your question.
The whole wheel is approximately 7.5 inches (19 cm) in diameter, and yes — you can absolutely carve out the center and use it to toss and serve Cacio e Pepe.
Traditional Cacio e Pepe is usually made with Pecorino Romano, which is sharper and saltier, but Pecorino Toscano works very well too and gives the dish a slightly milder, more rounded flavor.
We don’t currently offer whole wheels of Pecorino Romano because they are much larger and less practical for home use, while this Pecorino Toscano wheel is a great size for this kind of preparation.
Grazie!
