The citrus liqueur Bergamotto Fantastico is not like the others. The genuine bergamot is native to Calabria, where it thrives in the southern sun. The zest is allowed to macerate for two months before being filtered through linen cloths after each fruit is hand-peeled in Pellaro’s gardens. What you get is an infusion with a summery scent and a sense of narrative.
There’s more going on here, though. You’ll detect hints of cardamom, lavender, coriander, and even a hint of aloe underneath the vibrant citrus burst. It’s complicated, but not in an ostentatious way. After supper, sip it straight or, for a novel and surprising twist, combine it with tequila and soda. In any case, it’s a glass that offers a small flavor of southern Italy.
